Monroe College Says 'Cheese'!

On Tuesday, July 13, the Monroe College Department of Hospitality Management and Culinary Arts presented the second in its “Meet the Chef” lecture series with a fascinating study of cheese, dubbed “The Cheese Stands Alone”. The guest speaker was Regina McDuffie, the manager of the cheese department at Whole Foods in Madison, NJ. Ms. McDuffie offered Monroe culinary students tasty samplings of ten different cheeses and described techniques for preparation, uses, choosing, and displaying cheese.
